Easy Potato Skillet

 

Our Mélange Spice Blend isn't just for chili. It pairs so well with foods like potatoes! Whip up this Easy Potato Skillet with your favorite eggs for a special weekend breakfast (or breakfast for dinner).

Easy Potato Skillet

  • 3 russet potatoes, very thinly sliced 
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 3-4 tsp. ghee or butter
  • 3-4 tsp. oil
  • 2 tsp. dried parsley
  • Maple Black Pepper Spice Blend*
  • Mélange Spice Blend*

 In a heavy bottom skillet, heat the ghee (or butter) and oil on medium heat. Add onion and garlic, sauté until lightly browned. Add half of the potatoes, allowing them to brown on both sides before adding second batch. Try not to handle potatoes too much as they are cooking, you want a nice color but not mushy potatoes. Once the second batch of potatoes are browned, add Spice Blends to your taste (I added a few teaspoons of each) and about 3 oz. of water. Put a lid on the pan and let it simmer on medium low heat for about 15 minutes until potatoes are fork tender. Stir everything together, taste for seasoning, and serve warm.

Makes about 3-4 servings.
